Production Methods
Gin is made entirely from 100% neutral spirit and flavoured with a collection of botanicals. These include, juniper berries, coriander, angelica, citrus peels, ginger, orris root, liquorice and cardamom. The flavouring process is completed in either of the two styles:
Compounded gin – which represents the cheap and easy route and offers little more than neutral spirit flavoured with oils and extracts of juniper and other botanicals.
Distilled gin – which is made from redistilling neutral spirit with an infusion of botanicals through Maceration; where botanicals are steeped in gin for a long period then are distilled. Or alternatively by Vapour Infusions; where dried botanicals are packed carefully into a small perforated basket through which heated alcohol vapours are passed.
